Lemon Bars Delight (Iris)

Ingredients
- CRUST:
- 2 cups flour -- sifted
- 1/2 cup powdered sugar -- sifted
- 1 cup butter -- softened
- LEMON CURD LAYER:
- 3/4 cup lemon juice (4 to 6 lemons depending on
- size) -- fresh squeezed
- 4 each eggs -- beaten
- 2 cups sugar
- 1/3 cup flour
- 1/2 teaspoon baking powder
- zest of three lemons

Preparation
Step 1
Preheat oven to 325 degrees.
CRUST: May use food processor to prepare dough; place all ingredients into
processor and pulse until mixture clings together). Sift flour and
powdered sugar together. Cut in butter mixture until mixture clings
together. Hand press into a 9x13 greased pan. Bake at 325 degrees until
lightly golden, about 15-20 minutes. Remove from oven.
Add lemon curd layer below.
While crust is baking begin next step. Wash and zest 2 lemons. Then
squeeze 1/2 to 1/3 cup lemon juice. Amount depends on your preference for
tart flavor.
LEMON CURD: May use food processor to prepare lemon curd. add all
ingredients together in bowl and process for two minutes until frothy.
Pour mixture over the half-baked crust and bake at 325 degrees for 30-35
minutes. Use a cake tester piercing the crust frequently during the last
few minutes to avoid burning. When no crust crumbs show on tester and it
starts to pull away from the pan, remove from oven. The tester will feel
slightly sticky (from the lemon curd).
IMMEDIATELY run a wet, sharp cutting knife between crust and pan. Wait
until totally cool and then cut into squares, then sprinkle sifted
powdered sugar on top.
Using a wet sharp knife to cut. Re-wet frequently, the knife will stick a
lot. Can re-sprinkle powdered sugar to cover any messy cuts.
OPTIONAL LEMON ICING: Zest and juice of one lemon; Add enough powered
sugar until thick and sweet enough for your taste. Add or subtract
ingredients to your liking for the amount of icing you want. You may want
just a drizzle verses enough to completely cover the entire pan.
