Ingredients

  • 1 cup dried cannelini beans
  • 2 tbsp. olive oil
  • 2 c. chopped onions
  • 2 c. chopped celery
  • 2 c. baby carrots, halved
  • 2 tbsp. minced garlic
  • 1 tsp. Italian seasoning
  • 1/2 tsp. red-pepper flakes
  • 5 c. reduced-sodium chicken broth
  • 1/2 lb. boneless ham steak, cut into 1/2" cubes
  • 1 can (14.5 oz.) no-salt-added diced tomatoes
  • 1/2 lb. chopped kale (4 cups)
  • 1 cup orzo

Preparation

Step 1

1. Soak beans in water overnight and drain.

2. Heat oil in large skillet over medium-high heat. Add onions, celery, carrots, garlic, Italian seasoning, and red-pepper flakes. Cook, stirring occasionally, until vegetables are tender, 8 to 10 hours on low or 5 to 7 hours on high. Stir in kale and orzo. Cover and cook on high until tender, 20 minutes. Season to taste.
