Ingredients
- 1.5 lb round steak
- 2 T flour
- 1/2 t season- all
- 1/2 c beef broth
- 1/2 c vegetable juice (V8)
- 1/4 t thyme
- 1 onion
- 2 carrots
- 2 stalks celery
- 1 leek
- 1 T parsley

Step 1
Chunk steak. Mix together flour and season-all. Toss steak in flour mix.
Heat coated skillet to med high. Add steak and brown. Remove from pan and drain fat. Combine broth, vegetable juice, and thyme. Add to skillet and bring to a boil. Return meat and add onion. cover and reduce heat, and simmer 1 hour. Add carrot, celery, and leek and simmer uncovered for 15 min. Sprinkle with parsley.
Serve over rice, potatoes, or noodles.
