Ingredients
- 1 lb zucchini, diced into 1/2 in pieces
- 1 qt vegetable stock
- 2 pints sliced mushrooms
- 1 package chopped kale
- 1 onion, diced
- 1 can artichoke bottoms, sliced thin
- 2-8oz cans sliced black olives
- 1-3oz jar capers
- 2-14oz cans diced tomatoes with roasted garlic and onion
- 2 T fresh garlic
- 2 T olive oil
- 2 T herbs de provence
- 1 T salt

Step 1
Put a large stock pot on med high heat. Add olive oil and heat through. Add mushrooms, kale, onions, and garlic and saute for several min until wilted. Add remaining ingredients including the liquid from the capers, olives, and artichokes and mix together. Bring to a boil, reduce heat, and simmer for 10-15 min until vegetables are soft.
