Ingredients
- 2 cups shredded Parmesan cheese
- 4 boneless, skinless chicken breasts
- Pepper to taste
- Extra-virgin olive oil

Step 1
Preheat a non-stick skillet on Medium-High heat.
Place Parmesan in large bowl. Season chicken with pepper. (Cheese will provide the salty flavor.) Firmly press the chicken into the Parmesan. Coat both sides of breasts.
Add 1 tablespoon of olive oil in skillet. Place breasts into skillet and cook 7 minutes on each side, until the cheese forms evenly and a golden casing appears.
Notes:
• Use 1 cup grated Parmesan and 1 cup bread crumbs instead of shredded Parmesan.
• For a neat twist, cut uncooked chicken breasts into strips. After cooking, slide on a skewer.
