Ingredients
- Cake:
- 2 eggs
- 2 cups sugar
- 2 cups flour
- 2 teaspoons baking soda
- 1 cup chopped nuts (optional)
- 12 oz can crushed pineapple (juice & all)
- Frosting:
- 1 stick butter
- 8 oz cream cheese
- 1 1/2 to 2 cups confectioners sugar
- 1 teaspoon vanilla

Preparation
Step 1
Cake:
Mix all ingredients in a large bowl by hand, mix well. Pour into greased & floured 13 x 9 pan. Bake at 350 degrees for 40-45 minutes. Frost once cool.
Frosting:
Beat all ingredients until fluffy.
Refrigerate frosted cake covered for up to 1 week.
