Ingredients
- 9 ounces honey roasted peanuts
- 1/2 cup unsalted butter, cold, cut into pieces
- 3/4 cup granulated sugar
- 1/2 cup firmly packed dark brown sugar
- 1 large egg
- 1 Tablespoon whole milk
- 1 teaspoon vanilla extract
- 1 1/4 cups unbleached, all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup turbinado sugar, for dipping

Preparation
Step 1
1. Heat oven to 375°F.
2. Place nuts into Vitamix container and secure lid.
3. Select Variable 1.
4. Turn machine on and slowly increase speed to Variable 10, then HIGH, using tamper to keep mixture moving.
5. Blend for 60 seconds or until ingredients are creamed and mixture flows freely through blades. Stop machine.
6. Remove lid plug.
7. Add butter, granulated sugar, brown sugar, egg, milk and vanilla.
8. Replace lid plug and select Variable 1.
9. Turn machine on and slowly increase speed to Variable 10, then HIGH, using tamper as necessary, for 20 to 30 seconds or until a creamy consistency has been reached.
10. Scrape mixture into a large mixing bowl and stir in the flour, baking soda, baking powder and salt using a stiff spatula or wooden spoon.
11. Mix well and incorporate completely.
12. Portion using a #20 scoop, roll into ball and cover in raw sugar.
13. Place on parchment lined cookie sheets.
14. Bake for 15 to 20 minutes or until edges are lightly golden brown.See More
