Ingredients

  • 2 cups frozen wild blueberries
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 cup cottage cheese
  • 1 cup Greek (Fage 0%) yogurt
  • 1 cup whole wheat flour
  • 3 eggs
  • Juice of 1 lemon
  • 1/2 tsp baking soda
  • pinch of salt

Preparation

Step 1

Combine berries, water, and sugar in saucepan and cook over low heat, until berries begin to break apart.

Beat together cottage cheese, yogurt, eggs, and lemon juice. Mix the baking soda, flour, and salt. Stir the dry into the dairy and mix just enough to blend.

Heat a skillet over med-low heat. Coat with spray and add batter in 1/4 cup spoonfuls. Flip when bubbles form. Serve with berry sauce.
