Ingredients
- 12 boneless, skinless chicken breast tenderloins
- 1 box Uncle Ben's Rice Pilaf
- 1 large onion, sliced
- 8 oz. sliced mushrooms
- 1 bell pepper, sliced
- 1-3/4 c. boiling water
- 1-1/2 c. frozen broccoli
- 3/4 c. light sour cream

Preparation
Step 1
Preheat oven to 425 degrees. In a 3-quart casserole dish, combine chicken, rice, seasoning packet, onion, mushrooms and bell pepper. Add boiling water; mix well. Cover the dish with a lid and bake 30 minutes. Stir in broccoli and bake, still covered, 10 minutes, or until chicken juices run clear. Remove from oven; stir in sour cream. Let stand, covered, 5 minutes, or until liquid is absorbed.
