Ingredients

  • 1/2 cup butter, at room temperature
  • 1/4 cup powdered sugar
  • 1 t. vanilla
  • 1 cup all purpose flour
  • 1/8 t. salt
  • 1 cup finely chopped pecans, filberts, or walnuts
  • powdered sugar, for rolling

Step 1

Beat butter and sugar together until creamy. Mix in vanilla. Add flour and salt. Beat until smooth. Stir in nuts. Shape into 1/2 inch balls. Place on ungreased baking sheet. Bake in a 350 degrees oven for 15 minutes, or until lightly browned. Remove from oven and quckly roll the hot cookies in powdered sugar. Let cool and roll again in sugar. Makes about 3 dozen.

Hint: Can use food processor. Place all ingredients, except powdered sugar for rolling, in processor. Add nuts whole, they will chop as they blend. Process until blended, about 30 seconds. Scrape down sides with spatula and process again until ball of dough forms, about 15 seconds.
