Ingredients
- 1 pound extra lean ground chicken-- crumbled
- ½ cup onion -- chopped
- 3 tablespoons dry taco seasoning mix
- 14 ½ ounces Mexican tomatoes (discard 2 tablespoons liquid) -- chopped
- 2 15-ounce cans pinto beans
- 1/3 cup ripe olives -- sliced
- 3 tablespoons fresh parsley -- chopped
- 4 ounces Monterey jack cheese -- shredded
- 1 package cornmeal mix -- prepared
- 1 tablespoon water

Preparation
Step 1
Sauté chicken and onion in a large skillet over medium heat; drain and blot with paper towels to absorb extra grease.
Add taco seasoning, tomatoes, beans, olives and parsley. Sprinkle with cheese.
Top with prepared cornmeal mix.
Bake at 350 for 15 minutes, or until lightly browned.
SERVING SUGGESTIONS: A big salad will do you-this is rich and delicious!
VEGETARIANS: Skip the beef and add TVP crumbles instead (Morningstar Farms makes a good frozen brand)
