  • 2 boneless skinless chicken breasts
  • 30 slices of pepperoni
  • 8 slices of provolone
  • 1/8 C flour
  • 1/8 C parmesan cheese
  • 1 1/2 T italian seasoning
  • 1/2 t garlic powder
  • 1/8 t onion powder

Preparation

Step 1

First, preheat the oven to 400 degrees.

Put the chicken breasts on a sheet of wax paper, sprinkle a little italian seasoning and a pinch of garlic powder on each side of them, cover with another piece of wax paper, and pound them with a wooden spoon, or a skillet, whatever you have. You'll want these to end up pretty thin, maybe 1/4 inch or a bit thicker.

Put the pepperoni in a skillet and let the fat render out. You aren't really trying to cook or crisp it, you just want the fat so you can lightly fry the flour coating in a bit.

Lay a couple slices of provolone on each chicken breast, then the pepperoni, then 2 more slices of cheese. Make sure to leave the fat in the skillet!

Roll up the chicken and secure with four toothpicks.

In a bowl mix the flour,, parm cheese,italian seasoning, garlic powder, and onion powder. Roll the chicken through this mixture to coat well.

Lay the chicken in the pan of fat from the pepperoni, on a medium high heat brown the coating. You don't need to worry about cooking anything, just get the outside layer brown. Just takes a few seconds on each side. Just keep turning until the whole thing is browned.

Spray a little oil on a cookie sheet and bake at 400 degrees for about 15-20 minutes. Just make sure the chicken is fully cooked.
