Ingredients
- 3 lb chicken
- 16 oz dried great northern beans
- ham bone
- 1-1/2 lb smoked sausage
- 1-1/2 cup chopped onion, sauted until golden
- 1 clove garlic, minced
- 1 1-lb cans chopped tomatoes
- 1 cup white wine
- 1 bay leaf
- 1 parsley sprig
- thyme
- salt
- pepper

Preparation
Step 1
Soak beans overnight.
Cover chicken with water and simmer over moderate hat approximately 1 hour. Shred chicken, reserve stock.
Rince beans and put in large pot with chicken, cover with stock. Simmer 1-1/2 to 2 hours. Add ham bone, sauted onions, garlic, and seasonings. Simmer 2-3 hours, adding sausage the last hour.
