Ingredients

  • 4 dried chilies, stemmed and seeded
  • 3 TBSP lime juice
  • 1 jalapeño pepper, coarsely chopped
  • 2-3 cloves garlic, chopped
  • 4 limes, cut in 1/4 slices
  • 5 boneless, skinless breasts
  • 8 corn tortillas, warmed
  • pineapple salsa
  • cilantro

Preparation

Step 1

1.Soak chiles in hot water and cover for 15 minutes. Remove chiles and reserve the water for cooking.

2. Chop chilles and combine the next three ingredients in blender, puree until liquid, transfer to a bowl and add the chicken, toss to coat and cover and chill for 8 hours.

3. Remove the chicken from marinade and sprinkle with sea salt.

4. Grill for 5-6 minutes on each side. Slice chicken diagonally across grain. Serve with warm tortillas and salsa and cilantro.
