GREEK SALAD POTATO SALAD AND DRESSING 0 Picture

Ingredients

  • Dressing:
  • 6 boiling potatoes
  • 2 medium sized white onions
  • 1/2 up thinly sliced green onions
  • 1/2 small green pepper
  • 1/4 cup finely chopped parsley
  • 1/2 cup mayonnaise salad dressing
  • Salt to taste
  • 1/2 cup distilled white vinegar
  • 1/4 cup each olive and vegetable oil

Preparation

Step 1

Boil potatoes in jackets for about 30 minutes or until tender. Drain, cool and peel the potatoes and when cold, slice into a bowl. Cut onions and peppers into thick slices and chop parsley. Add to potatoes and sprinkle lightly with salt. Fold in salad dressing using more if necessary.

Dressing:

Blend vinegar and olive and vegetable oil together. Sprinkle entire salad with vinegar and blended oils adding more if necessary. Sprinkle oregano over all.
