- 4 cups cornmeal
- 3 cups boiling water
- 1/4 cup firmly packed brown sugar
- 2 tbsp butter, softened
- 1 tsp salt
- 2 eggs, lightly beaten
- Butter (to serve with)
- Maple syrup or molasses (to serve with)

Step 1
Preheat oven to 400 F. In a medium mixing bowl, combine cornmeal and water, stirring well by hand (mixture will be very thick). Stir in remaining ingredients. Using about 1/2 cup mixture for each cake, spread mixture into circles about 4 inches in diameter on greased baking sheets. Bake 20 to 25 minuts or until centers are set. Serve warm with butter and maple syrup or molasses.
