This is a mixture of almonds and nutritional yeast that come together and look like the Parmesan grated topping you used as a kid. It takes seconds to make and keeps for weeks in the fridge.

  • 1/2 cup slivered almonds (the ones without skins)
  • 1/4 cup nutritional yeast
  • 1/4 teaspoon garlic powder, optional
  • small a small amount of olive oil, optional
  • 1/4 to 1/2 teaspoon salt (to your taste)

Step 1

I use a small food processor to make this. I think it holds 2 or 3 cups. Put the almonds, yeast, garlic powder, and salt in the food processor. Pulse until it looks like a grain.

I add a drizzle of olive oil and processor more until the granules became very small , but you can keep it added-fat free and skip the olive oil.

Taste, add more salt if needed and blend again. Repeat until it’s just the way you like it.

I like to make mine very salty because I use the mixture instead of salt in recipes. You want it to look like that Parmesan grated topping you used as a kid.

Store leftovers in the fridge.
