Ingredients
- 1 (14 1/2 oz.) can chicken or beef broth
- 1 1/2 tbsp. olive oil
- 1/2 large onion, chopped
- 1 cup uncooked long grain rice
- 1/3 cup chopped fresh basil or 1 1/2 tsp. dried
- 1/4 cup pine nuts, toasted
- Salt
- Black Pepper

Step 1
Bring broth to a boil in a small saucepan; reduce heat to low and keep warm.
Heat oil in a heavy saucepan over medium heat. Add onion and saute for 6 minutes or until translucent. Add rice and cook, stirring constantly, for 1 minutes.
Stir in broth and bring mixture to a boil. Cover; reduce heat and simmer for 20 minutes or until broth is absorbed and rice is tender. Stir in basil and nuts. Season to taste with salt and pepper. Serve immediately.
This recipe may be doubled or tripled.
