Ingredients
- 6 boneless skinless chicken breasts, cooked and chopped
- 1 large bunch of broccoli, cooked and chopped
- 2 cans of cream of broccoli soup
- ½ cup of chicken broth
- 1 ½ cups low-fat mayonnaise
- ½ teaspoon curry powder
- 2 cups grated sharp cheddar cheese
- 3 tablespoons lemon juice
- 1 cup saltine crackers, crushed and moistened with 1 T melted butter

Preparation
Step 1
Layer chicken on the bottom of an un-greased 9 x 13 glass baking dish. Add a thick layer of broccoli on the top of the chicken.
Make the sauce in a mixing bowl by combining cream soup with mayo. Then add chicken broth until mixture is smooth. Add curry powder, lemon juice and almost all the grated cheese, reserving 1/2 cup.
Pour the sauce on top of the chicken and broccoli in the pan. The sauce should cover the chicken and broccoli in the dish.
Sprinkle the butter-moistened crackers on top and sprinkle reserved cheese.
Bake in a 350 degree oven for 40-45 minutes or until the casserole is bubbling and hot.
