Ingredients
- 2 cups (1 lb) white beans
- 6 c cold water
- 1 med onion,sliced
- 1/2 Tbsp salt
- 2 tsp cider vinegar
- 1 Tbsp brown sugar
- 1/2 tsp prepared mustard
- 1/4 c molasses
- 1/2 c ketchup
- pinch of black pepper
- 1/4 lb pork or bacon

Preparation
Step 1
Soak beans in cold water overnight
Drain
Add 5 cups of cold water to cover
Heat to boiling and then simmer 30 min or until nearly tender (beans will not become any softer after being placed in the oven)
Drain
Place onion slices on the bottom of 6 cup casserole dish
Add remaining 7 ingredients in with the beans, stirring gently to combine
Pour into casserole dish
Add enough water to cover mixture
Place sliced pork/bacon on top
Cover with lid and bake at 250 for 7 hours
When beans are tender remove 1 cup and mash and stir back into mixture
Add water as needed to keep brans covered
One hour before serving remove to darken beans
