- 2 racks (about 6 lbs) pork spareribs
- 3/4 cup dry rub

Step 1
Massage rub into ribs, let stand at room temperature 1 hour or refrigerate overnight.
Heat oven to 300 degrees. Put ribs on a rack on a baking sheet, meaty side up. Wrap sheet and ribs in foil. Roast for 1 hour. Remove foil, roast for 2 1/2 more hours.
Take ribs out of oven, wrap in foil, put in paper bag and roll the end of the bag to seal. Let stand for 1 hour.
Cut ribs into individual pieces, serve.
