Reuben Brunch Casserole (Mom's Favorite)

Ingredients
- 10 slices Rye Bread (Cut into 3/4 inch cubes)
- 1 1/2 lbs. Cooked Corned Beef (could be decreased to 1 lb.)
- 2 1/2 cups Shredded Swiss Cheese (10 oz.)
- 6 Eggs (slightly beaten)
- 3 cups Milk
- 1/4 tsp. Pepper

Preparation
Step 1
1. Grease 9 X 13 inch glass baking dish.
2. Arrange bread cubes on bottom of dish.
3. Coarsely shred corned beef with knife, and layer over the bread.
4. Sprinkle with cheese.
5. Beat eggs, milk, and pepper in bowl until well blended.
6. Pour over corned beef mixture.
7. Cover with foil, and refrigerate overnight.
8. Preheat oven to 350 degrees.
9. Bake COVERED for the first 45 minutes.
10. Bake UNCOVERED (AT 350 DEGREES) for 10 minutes or until bubbly.
11. Serve immediately!
