Ingredients
- 500 - 500 g squid rings (raw)
- 1/2 - 1/2 cup water
- 1/4 - 1/4 cup extra virgin olive oil
- 2 - 2 tablespoons white wine vinegar
- 1 - 1 garlic clove (minced)
- 1 - 1 tablespoon basil (finely chopped)
- 1/4 - 1/4 teaspoon pepper (freshly ground or to taste)
- 1/4 - 1/4 teaspoon salt (sea freshly ground or to taste)
- 1 - 1 lettuce (mignonette shredded)
- 250 - 250 g cherry tomatoes (halved)
- 1 - 1 small zucchini (baby, recommended sliced)
- 1/4 - 1/4 cup pitted black olives (sliced)

Preparation
Step 1
1. Place calamari rings and water in a saucepan put lid on and bring to the boil, reduce heat and simmer for 5 to 10 minutes until calamari goes from translucent to opaque.
2. Drain and refresh under cold water and then drain again.
3. Combine the oil, vinegar, garlic, basil and seasonings in a bowl.
4. Add the calamari to the bowl and refrigerate for 1 -2 hours.
5. Combine the remaining ingredients, add the calamari and toss lightly and serve immediately.
