Ingredients
- 4 TB olive oil
- 3 potatoes, peeled and grated
- 6 sprigs fresh thyme (or 1/2 tsp powdered)
- 1/4 cup finely chopped fresh chives
- 1/3 tsp salt

Step 1
Place olive oil in a large nonstick skillet over medium heat.
Mix remaining ingredients in a large bowl. Place grated potato mixture in a ricer (or place between sheets of paper towels) and squeeze any excess water out of the potatoes. This will make them crispy.
When oil is heated to a simmer, pour potato mixture into skillet and mash it down using a spatula. Cook until browned and crispy, about 4 minutes. Turn over and cook other side until browned and crispy, about 3 mintues. Garnish with more thyme or chives, if desired.
