Peanut Butter Bites

Ingredients
- 1/2 c. sugar
- 1/2 c. brown sugar, packed
- 1/2 c. creamy peanut butter
- 1/4 c. butter, softened
- 1/4 c. shortening
- 1 egg
- 1-1/4 c. all-purpose flour
- 1/2 t. baking soda
- 1/2 t. baking powder
- 1/4 t. salt

Before baking, top each cookie with a mini peanut butter cup or chocolate drop, if you’d like.
In a large bowl, blend sugars, peanut butter, butter, shortening and egg. Stir in remaining ingredients. Chill for about 2 hours, until firm. Form dough into one-inch balls; place 1-1/2 inches apart on ungreased baking sheets. Flatten balls in a criss-cross pattern with a fork dipped in sugar. Bake at 375 degrees for 9 to 10 minutes, or until lightly golden. Cool several minutes; remove from baking sheets. Cool on a wire rack. Makes 2-1/2 to 3 dozen cookies.
