Polenta Fries

- 1 1/3 cups whole milk
- 2 cups polenta (corn meal)
- salt
- Extra-virgin olive oil, for brushing
- 1/2 cup grated gruyere cheese
- 3 TB unsalted butter

Preparation
Step 1
Bring 7 cups of water to a simmer in large saucepan. Combine 4 cups of the hot water and the milk in a heatproof bowl(bowl should fit over the saucepan).
Gradually whisk in the polenta and 2 tsp of salt. Cover bowl tightly with foil and set over simmering water.
Meanwhile, brush a 9 inch square baking dish with olive oil.
Stir the cheese and butter into the polenta. Spread in the prepared dish and refrigerate until set, at least 2 hours or overnight.
Preheat over to 450 degrees. Slice the chilled polenta into eighteen sticks and transfer to baking sheet lined with parchment paper. Brush the sticks with oil and sprinkle with salt.
Bake until golden brown, 30 to 35 minutes, turning halfway through.
Serve with Marinara sauce (optional)
