Ingredients

  • 2 tablespoons unsalted butter or coconut oil, melted
  • 4 large eggs
  • 3 tablespoons coconut flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon maple syrup
  • 1 pinch sea salt
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons Coconut oil
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large tart apples – peeled, cored and sliced
  • Melted butter to coat pie plate

Preparation

Step 1

Preheat oven to 425 degrees F

In a large bowl, blend eggs, coconut flour, baking powder, maple syrup and salt. Gradually mix in coconut milk, stirring constantly. Add vanilla, melted butter and 1/4 teaspoon nutmeg. Let batter stand for 30 minutes or overnight.

Add apples to the pan and sauté for 5 minutes. Just soften.

In a small bowl, combine honey, cinnamon and 1/4 teaspoon nutmeg. Add in apple mixture

Take the hot pan (carefully) out of the oven and brush melted butter on the bottom and edges of pan. Line bottom of pan with apples and use all of the liquid from the mixture in the pan. Gently pour the batter mixture over the apples.

Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees; F and bake for 10-13 minutes. Slide pancake onto serving platter and cut into wedges.

I made this for breakfast this past weekend and it was absolutely delish. It reminded me of something my mom would make when I was growing up. I used Pink Lady apples for this recipe and all I can say is YUMMY.
