CHIPOTLE BLACK BEAN AND QUINOA STEW 1 Picture

Ingredients

  • 1 lb Black Beans (dried)
  • 1 cup Quinoa, Dry
  • 1 Large Sweet Potato, diced
  • 1 medium Onion, Sweet, diced
  • 8 cups water
  • 1 tsp Fresh Garlic, minced
  • 1/2 tsp Ground Coriander Seed
  • 1/2 tsp Ground Black Pepper
  • 1/4 tsp Cardamom

Step 1

1. Rinse and dry beans and quinoa.

2. In a slow cooker, combine black beans, quinoa, sweet potato, onion, water with garlic, coriander, ground black pepper and ground cardamom. Stir to combine and cover.

3. Cook for 4 to 6 hours on high or 8 to 10 hours on low.

4. Season with salt when the stew is finished.

5. Serve with fresh lime wedges and chopped fresh cilantro.
