Tocino, Garlic rice and Sunny side up Egg (Tocilog)

I cooked chicken tocino last week for our lunch and my hubby commented why I did not served it on breakfast, of course I knew that this can be eaten for any meal and it is great for breakfast but I always have no enough time to cook early in the morning during weekdays, I always reserved my breakfast cooking skills during weekends. So I told him that I will make tocilog someday if I have time. In Philippines, Tocino is usually served with Garlic rice (sinangag) and fried egg, Filipinos used to call this combination as Tocilog and it is best when eaten during breakfast time. The tocino recipe written below is just a guide, you can adjust the amount of salt or sugar depending upon your taste, but make sure to use right proportion, use more amount of sugar than salt.

Tocino, Garlic rice and Sunny side up Egg (Tocilog) 1 Picture

Ingredients

  • 2 pcs. egg (fried in sunny side up style)
  • For the garlic rice
  • 2 cups cold cooked rice
  • 4 cloves of garlic, minced
  • 1 small onion, minced
  • 2 tbsp. cooking oil
  • salt to taste
  • For Tocino
  • 1 chicken breast, sliced into thin squares (1 inch each side)
  • 1 1/2 tbsp. rock salt
  • 3 tbsp. sugar
  • 1 tsp. vinegar (optional)
  • 1/4 cup water
  • 1-2 tbsp. oil

Preparation

Step 1

For Garlic Rice
1. Heat the oil in wok.
2. Add the garlic and stir until brown. Add in the onions, saute for few seconds.
3. Add the rice, stirring to blend well with the rest of the ingredients.
4. Season with salt. Cook until all the rice are heated through.

For Tocino
1. Mix salt and sugar together.
2. Press both sides of chicken slices into the mixture.
3. Arrange the pressed chicken into a bowl, cover and refrigerate for at least whole night.
4. Boil the tocino, water and vinegar until almost dry.
5. Add the cooking oil and cook until it just caramelizes slightly on both sides.
6. Serve with fried egg and garlic rice.
