  • 4 Eggs
  • 4 Strips Thick Cut Bacon
  • 1/4 Cup (or less) Chopped Scallions
  • 1 Tbsp Butter
  • Sour Cream
  • Shredded White Cheddar or Parmesan Cheese

Step 1

Cut the bacon into 1/4 inch pieces and cook over medium heat. In mixing bowl, whisk eggs. When cooked, remove bacon from pan. In separate pan, melt and coat the bottom with butter. When hot combine eggs, bacon, and chopped scallions. Let it cook for a minute and swirl in sour cream. The sour cream fluffs the eggs so use at your discretion (not too much!). When eggs are cooked, remove and sprinkle cheese over top.
