Ingredients
- 6 carrots, sliced
- 4 celery stalks, sliced
- 1 bunch green onions, chopped
- 1 stick butter
- 2 cans chicken broth
- 3 cans cream of potato soup
- 1 cup milk
- 8 oz. grated cheddar or Colby
- 8 oz. sour cream
- 1/4 cup chopped parsley
- approx. 1 cup broken Rotini multicolored pasta, cooked and drained

Step 1
Sauté carrots, celery, and green onion in butter. Add chicken broth; simmer 30 minutes. Add potato soup; simmer 20 minutes. When almost ready to serve, stirring often over low heat, add last 5 ingredients. Heat through. Serve with hot French bread.
