  • 4 celery stalks, sliced
  • 1 bunch green onions, chopped
  • 1 stick butter
  • 2 cans chicken broth
  • 3 cans cream of potato soup
  • 1 cup milk
  • 8 oz. grated cheddar or Colby
  • 8 oz. sour cream
  • 1/4 cup chopped parsley
  • approx. 1 cup broken Rotini multicolored pasta, cooked and drained

Step 1

Sauté carrots, celery, and green onion in butter. Add chicken broth; simmer 30 minutes. Add potato soup; simmer 20 minutes. When almost ready to serve, stirring often over low heat, add last 5 ingredients. Heat through. Serve with hot French bread.
