Ingredients

  • 2 cups peeled and shredded celeriac
  • 1 cup shredded fennel bulb
  • 1 large carrot peeled and shredded
  • 1 tbsp. fresh lemon juice
  • 1/4 cup non fat sour cream
  • 2 tbsp. nonfat mayonnaise
  • 1 tbsp. coarse Dijon mustard
  • 1 tbsp. evoo
  • 1/2 tsp salt
  • 1/4 tspn ground black pepper
  • 1 tspn cayenne pepper
  • 1/4 cu chopped scallions
  • 2 tbsp. minced fresh parsley

Preparation

Step 1

Use food process to shred celeriac, fennel and carrot and combine with lemon juice in large bowl. Toss well. In small bowl whsk the sour cream, mayo, mustard,evoo, salt, pepper, and cayenne. Combine with celeriac mixture and fold in scallions and parsley. Refrigerate for at least 30 minutes.
