Ingredients
- 4 boneless pork chops
- Vegetable cooking spray
- 1/2 cup chopped onion
- 1/2 chopped celery
- 1/2 cup chopped green pepper
- 1/2 cup chopped red pepper
- 3 cloves crushed garlic
- 1 - 8 -1/2 oz, can whole tomatoes, undrained and chopped
- 1/2 teaspoon hot sauce
- 1/4 teaspoon pepper
- 2 cups hot cooked rice, cooked without oil or salt
- 1 teaspoon cornstarch
- 1/4 cup chicken broth

Step 1
Coat a non-stick pan with cooking spray. Place over medium high heat until hot, brown chops. Remove from skillet. Add onion and next 4 ingredients, saute until tender. Remove 1/2 cup vegetable mixture from skillet, set aside. Add tomatoes, hot sauce, and pepper to skillet. Return pork chops to skillet, cover and cook 15 minutes, turning chops once. Stir reserved 1/2 vegetables into rice, spoon onto serving plate.
Arrange pork chops on top of rice. Combine cornstarch and chicken broth, add to vegetables in skillet. Cook over medium heat, stirring constantly, until mixture is thickened. Spoon over chops.
