Yuca Frita (Cassava Fries)

Ingredients
- 1 1/2 lb yuca or cassava pieces (fresh or frozen)
- Water (enough to cover the cassava)
- 2 garlic cloves, finely chopped
- Salt to taste
- Vegetable oil for frying

Preparation
Step 1
1. Place the cassava in a medium pot and cover it with enought water. Add the garlic and season with salt to taste. Cover the pot and bring it to a boil on high heat, then, lower the heat to medium low and cook for about 20-30 minutes or until it's tender.
2. Drain the cassava and let it cool on a cutting board. Once it has cooled, pat dry it with a paper towel and cut it into thick pieces, similar to steak fries.
3. Fry the cassava pieces at 375ºF for about 5 minutes or until they're golden brown. Then, take them out of the oil and drain them on paper towels.
4. Season them with salt to taste and serve immediately with lime wedges and any type of dipping sauce of your choice such as pink sauce, garlic mayo, ketchup or guacamole.
**Tip: Cassava has a thick string in the middle which you can remove with your knife before boiling if using fresh cassava. When using frozen cassava, you can remove it with your hands after it has cooled after boiling.
