Ingredients

  • 1 cup oil
  • 1 1/2 cups brown sugar packed
  • 4 eggs
  • 2 cups sifted flour
  • 1 teaspoon baking powder
  • 2 teaspoons salt
  • 2 teapsoons cinnamon
  • 2 teaspoons allspice
  • 1 teaspoon cloves
  • 1 cup apple or orange juice
  • 1 cup more sifted flour
  • 1 cup thinly sliced citron 1 lb
  • 1 cup chopped candied fruit
  • 2 lb dates
  • 1 1/2 cups whole candied cherries
  • 1 cup seeded raisins
  • 3 cups chopped pecans

Preparation

Step 1

Heat oven to 275*
combine oil, sugar and eggs
beat vigorously with spoon or electric mixer for 2 minutes
sift 2 cups flour with the baking powder, salt and spices
stir into the oil mixture alternately with the fruit juice
mix the other cup of flour with the fruits and nuts
pour batter over the fruit, mixing thoroughly
pour into two loaf pans greased and lined with brown paper
place a pan of water on lower oven rack
bake cakes 2 1/2 to 3 hours
after baking let cakes stand 15 minutes befor removing from pans
cool thoughly on rack without removing paper
when cool remove paper
wrap in alumium foil to store
if desired, cakes can be wrapped in cloth damped with brandsy or wine
an hour or two befor slicing,
chill cake in refrigerator
