Ingredients
- 1/2 cup vegetable oil (or applesauce)
- 1/3 cup brown sugar
- 1 egg
- 1/2 tsp vanilla
- Milk
- 2 cups old-fashioned oatmeal
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1 coarsely chopped tart apple
- 1/2 cup dried fruit (raisins, cherries, cranberries)
- 1/2 cup coarsely chopped pecans or walnuts

Step 1
Mix first four wet ingredients in 2-cup measuring cup. Whip until blended, and then fill measuring cup to the 2-cup mark with milk.
Mix in mixing bowl the dry ingredients. Stir, and then add fruits and nuts. Pour wet ingredients into dry ingredients, stir, and then pour entire mixture into baking dish sprayed with spray. Cover and refrigerate 2 hours or overnight.
In the morning, bake at 350 for 25 minutes. Serves 4 and may be doubled (if doubled, use a 9x13 baking dish and bake for 40 minutes).
