Ingredients
- 2 cloves garlic
- salt
- 1/2 cup tahini
- 1/4-1/2 cup cold water
- 1/2 cup lemon juice

Step 1
Crush garlic cloves with 1/2 tea salt in a mixing bowl. Gradually add tahini and beat well with wooden spoon
Beat in a little water and lemon juice alternately. The water thickens the mixture, lemon juice thins it.
Add all the lemon juice and enough water to give a thin or thick consistency, depending on use. Add more salt to taste and use as directed in recipes.
FOOD PROCESSOR OR BLENDER METHOD: Place tahini and garlic in blender or processor container and process for a few seconds to crush the garlic. Add lemon juice and water alternately, a little at a time, until desired consistency is reached. Blend in salt to taste.
You also can add some parsley, however do not over chop, parsley must still be visible.
