Ingredients
- 3 tbs Dijon mustard
- 2 tbs pure maple syrup, grade B
- 2 tbs canola oil, divided
- 1 tbs finely chopped thyme or 1 tsp dried
- 3/4 tsp fresh ground pepper
- 1/2 tsp salt
- 4 to 4.5 pounds bone in chicken pieces - legs, thighs, breasts
- 1 1/2 cups fresh breadcrumbs, whole wheat

Step 1
1. Whisk mustard and syrup, 1 tbs oil, thyme, pepper and salt in a large bowl to make the marinade. Add chicken pieces and coat evenly. Cover and marinate for min 30 minutes up to 6 hours.
2. Heat oven to 400. Set wire a wire rack on a large baking sheet
3. combine breadcrumbs and the remaining oil on a plate. Dredge the skin side of the chicken in the crumbs. Arrange chicken with breaded side up on the wire rack, leaving at least one inch between pieces.
4. Bake until golden brown and an instant read thermometer reads 165 in the thickest meat section - 35-40 min. Serve hot or cooled.
