Ingredients
- Pancakes:
- 1 cup cottage cheese
- 1/3 cup all-purpose flour
- 2 tbsp canola oil
- 3 eggs, lightly beaten
- 2 tbsp sugar
- 1/8 tsp salt
- Cooking spray
- Toppings:
- Maple syrup
- Butter
- Sliced, fresh strawberries

Preparation
Step 1
In a blender, combine cottage cheese, flour, oil, eggs, sugar, and salt. Blend until smooth. Thin slightly with water, if necessary.
Preheat a griddle pan on medium. Coat with cooking spray. Pour batter, using 1/3 cup per pancake, onto pan. (Makes about 8 pancakes). Cook until bubbles appear. Flip and cook until golden. Serve with toppings.
