Ingredients

  • 2 tbs dried oregano
  • 1 tbs chili powder
  • 1 tbs paprika
  • 1 tbs ground cumin
  • 1 tbs salt
  • 3 pounds chicken drumsticks
  • 1 pkg filo dough - thawed
  • 3 tbs honey Dijon mustard
  • 1/2 cup unsalted butter, melted

Step 1

1. Heat oven 350
2. In a small bowl, combine all spices and mix well. Rub the chicken evenly with spice mix and place on baking sheet. Cook for 1 hour and 15 min. Remove and let cool.
3. While chicken is cooking, unfold the filo dough,stacking the layers so the ends align and cut into 6 inch wide strips the length of the dough. cover with a damp cloth until ready to use.
4. Once chicken is cool, make a small slit in the leg and about 2 tsp of the mustard.
5. Working with one sheet of filo at a time, brush with butter and top with another sheet and brush lightly again. Repeat so there are 4 layers evenly stacked. Roll one leg of chicken with bone end exposed in the brushed filo. After rolled, brush with butter. Repeat until all legs are wrapped and brushed.
6. Return the wrapped legs to oven and bake for another 20-30 min. Serve immediately.
