Easy Berry Crumble Bars

Ingredients
- 3/4 cup butter, cubed
- 1 cup packed brown sugar
- 1 3/4 cups all-purpose flour
- 1 1/2 cups quick-cooking oats
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- Cinnamon
- 1 cup Raspberry, Blackberry or Mixed Berries preserves

Preparation
Step 1
Place butter into a 2 quart microwaveable bowl. Heat uncovered in microwave at 50% power for 20-30 seconds or until softened. Add brown sugar and stir until creamy. Add flour, oats, vanilla, salt and baking soda. Mix well.
Pat half of the mixture into a greased 8″ square microwave-safe dish. Microwave, uncovered, at 70% power for 3 ½ – 4 ½ minutes or until mixture sets. Rotate a half turn after 3 minutes. Crust will be uneven.
Spread preserves evenly leaving a small outer edge without preserves. Sprinkle with remaining dough. Press down lightly. Sprinkle with cinnamon
Microwave, uncovered, at 70% power for 3-4 minutes or until set, rotating a half turn after each minute.
Serve warm with a dollop of ice cream.
