Ingredients
- Crust:
- 1-3/4 Cup - Graham Cracker Crumbs
- 1/4 Cup - Chopped Walnuts (Optional)
- 1/2 Tsp - Cinnamon
- 1/2 Cup - Melted Butter or Margarine
- Filling:
- 3 Eggs (Room Temperature)
- 2 - 8 oz. Packages Cream Cheese (Softened)
- 1 Cup - Sugar
- 1 Tsp - Salt
- 1 Tsp - Vanilla Extract
- 1/2 Tsp - Almond Extract
- 3 Cups - Sour Cream

Step 1
Preheat oven to 350 degrees
Mix all crust ingredients, reserving 3 Tablespoons for topping. Press remainder of crumbs into bottom and sides of 9 or 10" springform pan.
Combine eggs, cheese, sugar, salt and extracts, beating with a mixer until smooth. Blend in sour cream on low speed until just mixed. Pour into crust. Top with reserved crumbs. Bake at 350 degrees for one hour, shut off oven, open door partially and allow to cool slightly before removing and placing in the refrigerator to chill for 4-5 hours or overnight.
