Ingredients
- 1/3 cup celery, chopped
- 2 TB green onions, chopped
- 1 TB tarragon, chopped
- 3 TB mayo
- 1/2 tsp lemon zest
- 1 1/2 TB lemon juice
- 1/2 tsp dijon
- salt and pepper
- 1/8 tsp red pepper
- 3/4 lb lobster, steamed and chopped
- 4 NE style hot dog buns, toasted

Combine all ingredients (thru lobster meat) well. Refrigerate for one hour. Divide among 4 buns.
