World's Best Chili

This recipe was adapted from a chili recipe by Paula Deen's son, Jamie. The result is this recipe which my family thinks is the best chili in the world. When I make it, I often do a double batch and make several different meals from it! When doing the double batch, I use 2 lbs. ground beef, 1 lb. hot sausage, and 1 lb. regular sausage.

Ingredients

  • 1 lb. ground beef
  • 1 lb. hot ground sausage
  • 1 med. onion, diced
  • 2 cloves garlic, minced
  • 1 small green pepper, diced
  • 1 28 oz. can diced tomatoes
  • 1 can whole, peeled tomatoes
  • cumin (to taste)
  • 1 T. chili powder
  • 1 can chili beans
  • 1 can black beans
  • 1 can kidney beans
  • 1 8-oz. can tomato sauce
  • 1 package chili seasoning mix or 2 tablespoons homemade chili seasoning mix
  • 2 cups chopped celery
  • shredded cheddar
  • sour cream (optional)
  • chopped green onions (optional)

Step 1

Brown ground beef and sausage in skillet. Drain. Set aside.

Spray large stockpot with nonstick cooking spray and heat over medium heat. Add the onion, garlic, green pepper, diced tomatoes, and whole tomatoes. Add cumin and chili powder to taste, and cook for about 8 minutes or until vegetables are tender. Add the beans, meat, chili seasoning, tomato sauce, and chopped celery. Let simmer and slow cook for 4 hours.

Serve with cheddar cheese, sour cream, and green onion as garnishes. Also delicious with grilled cheese sandwiches, over hot dogs, and in chili stack plates.
