Bunny Cupcake

Ingredients
- Sweetened flake coconut
- 1 vanilla wafer (or a madeleine cake, as pictured here)
- 1 cupcake (use your favorite recipe)
- 1 pink jellybean
- 1 mini cupcake (use your favorite recipe)
- Licorice or caramel string
- Vanilla frosting
- 2 Nerds
- Dots or other round candy

Preparation
Step 1
Put a handful of coconut in a shallow bowl. Frost the large cupcake generously and dip it into the coconut so that it clings to the frosting. Remove the paper cupcake liner on the mini cupcake and frost it liberally, too, letting the frosting extend a little ways down the unwrapped edges. Dip it in the coconut, then set it sideways on the top of the large cupcake.

Cut the vanilla wafer in half (or quarter the madeleine and use the two curved top pieces) and use a dab of frosting to gently adhere these “ears” to the top of the mini cupcake

Press a pink jellybean into the center of the mini cupcake for a nose, then trim 4 short lengths of licorice or caramel string and poke two in on either side for whiskers. Press in a pair of Nerds or Dots for eyes.
