Ingredients

  • 22 oz of cherry tomatos
  • 1 onion halfed and thinly sliced
  • 4 garlic cloves smashed and sliced
  • 2 cans of artichokes halved and drained (13.5 oz each)
  • 1/2 cup pitted olives ( kamalata olives)
  • 1/2 cup capers berries
  • 1/4 of extra virgin olive oil
  • 1/4 of dry white wine
  • salt and pepper
  • 1 1/2 pound firm white flesh fish cod or monkfish, ( 4 pieces )
  • 1 small Lemon thinly sliced
  • bread for dipping

Preparation

Step 1

1. Combine tomatoes, onion,garlic artichokes, olives, caper berries, oil and wine in a large straight-sided skillet (it will be used on the grill). Season with salt and pepper, then season fish on both sides with salt and pepper and arrange on top of around the fish.

2.preheat grill to medium - high. Place skillet on grill, cover grill and cook until fish is opaque throughout, about 20 minutes. sever with bread.
