Ingredients

  • 5 Lbs Ground Chuck
  • 2 Lb Ground Pork
  • 2 Pound Ground Veal
  • 2 Large Onions, minced
  • 2 Bell Peppers, minced
  • 16 Ounces Italian Seasoned Bread Crumbs
  • 2 Ounce Cajun Bbq Rub
  • 2 Teaspoon Thyme
  • 2 Teaspoon Sage
  • 6 Large Eggs, beaten
  • 1/4 Cup Danny's Glaze
  • 1/4 Cup Sesame Oil
  • 1/3 Cup Danny's Glaze, for topping
  • DANNY'S, GLAZE
  • 1 Cup Brown Sugar
  • 1/4 Cup Apple Cider Vinegar
  • 1/4 Cup Yellow Prepared Mustard

Preparation

Step 1

Preparing Danny's Glaze: Add ingredients to a small pot and simmer (DO NOT BOIL)

Meat Loaf: Thouroughly hand mix all ingredients (except topping glaze) and form into loaves.

Place loaf onto trimmed parchment paper and place into a 275°F pit. At a internal temp of about 100°F, score the top of the loaf in a diamond pattern and apply half of the sauce, then continue cooking to an internal temp of 155°F. Remove from pit and apply the other half of the glaze mixture and return to the pit until reaching 165°F. Remove from pit and tent under foil for approx. 10 min. before slicing.
