Ingredients

  • 8 slices bread
  • 1-2 balls buffalo mozzarella
  • 4-8 duck eggs, hard boiled and sliced
  • 4 TBS unsalted butter
  • 1/4 cup extra virgin olive oil
  • 3 anchovy fillets
  • 1 1/2 cups green onions or ramps
  • 1/8 tsp salt

Step 1

Make the Ramp Bagna Cauda:

Combine the butter and olive oil in a small saucepan and turn the heat to medium. When the butter has melted, add the anchovies, green onions, and salt and cook, stirring occasionally, until the anchovies disintegrate, 15-20 minutes. Set aside to cool.

Taste the sauce and adjust the seasoning with more salt if necessary. Use immediately or store in the refrigerator for up to 3 days.


Assemble the Sandwich:

Layer the bread with mozzarella, egg, and bagna cauda. Grill on a panini press. Top with more bagna cauda, if desired.
