- 3 large youkon potatoes (about 2 lbs)
- 1 lg sweet onion
- 1 cup matzo meal, medium grain
- 1 egg
- 1 tsp salt
- 1/4 cup EVOO
- Garnish: sour cream and/or fresh applesauce

Preparation
Step 1
Peel and grate the potatos and onion by hand or in a food processor and put them in a large bowl
Add the matzo meal and the egg. sprinkle the salt and blend everything together untill the potatos and the onion are coated with the matzo meal. Let stand 5 minutes.
With clean hands, roll a ball of dough just big enough to fit into the palm of your hand and flatten it out with your palms to make a round cake. Repeat the process until batter is used up.
Set a medium saucepan over medium-high heat with 1 tbsp EVOO. lay 4 pancakes in the hot oil for 1 minute on each side until they are golden brown. Put on papertowels to soak up extra oil. Repeat, adding more oil to the pan until all pancakes are cooked. Serve with sour cream and a side of fresh apple sauce.
