Ingredients

  • 8 sole fillets
  • 1/2 cup flour
  • 1/4 tsp seasoning salt
  • 1/4 tsp black pepper
  • 7 tbs butter
  • 1/4 cup fresh lemon juice
  • 2 tbs chopped parsley

Preparation

Step 1

1. Mix flour with salt and pepper in a shallow dish
2. Dredge the fish in flour mixture
3. Heat a large skillet over high heat
4. Add about 3 tbs of butter in skillet
5. Saute the fish in two separate batches, cooking each side (on high heat) for 2 minutes per side. Transfer batch to plate and keep warm.
6. Complete second batch as above.
7. To the hot skillet add the remaining 4 tbs of butter, cook until brown, add lemon juice, bring to a boil and add the parsley. Season with salt and pepper to taste.
8. Remove fish from warming oven and pour warm sauce over the fish.

NOTE: I added bay shrimp after the addition of parsley in the sauce for an added taste.
